Simple meals for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup chopped bell peppers
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes or until liquid is absorbed.
- In a skillet, mix black beans, bell peppers, corn, cumin, chili powder, and salt.
- Heat mixture over medium heat for 5 minutes.
- Fluff quinoa with a fork and serve with the bean mixture.
Notes
- Adjust spices to your taste.
- Feel free to add other vegetables.
