Ingredients

  • Salt to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and cover.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. In a skillet, mix black beans, bell peppers, corn, cumin, chili powder, and salt.
  6. Heat mixture over medium heat for 5 minutes.
  7. Fluff quinoa with a fork and serve with the bean mixture.
