Description
A simple and delicious Hoppin’ John recipe made with black-eyed peas and rice.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 cup long-grain white rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- 1 smoked sausage, sliced (optional)
Instructions
- Rinse and soak the black-eyed peas overnight.
- In a pot, combine soaked peas and water. Bring to a boil.
- Add onion, garlic, salt, pepper, and bay leaf. Simmer for 30 minutes.
- Stir in rice and sausage. Cover and cook for 20 minutes or until rice is tender.
- Remove bay leaf before serving.
Notes
- Serve with cornbread for a complete meal.
- Can be made vegetarian by omitting sausage.
- Adjust seasoning to taste.
