Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 smoked sausage, sliced (optional)

Instructions

  1. Rinse and soak the black-eyed peas overnight.
  2. In a pot, combine soaked peas and water. Bring to a boil.
  3. Add onion, garlic, salt, pepper, and bay leaf. Simmer for 30 minutes.
  4. Stir in rice and sausage. Cover and cook for 20 minutes or until rice is tender.
  5. Remove bay leaf before serving.

Notes
