Ingredients

  • 2 lobsters (1.5 lbs each)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1 medium onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the lobsters by boiling them in salted water for 8-10 minutes.
  2. Remove the meat from the lobsters and chop it into small pieces.
  3. In a pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Sauté until soft.
  4. Add tomato paste, thyme, and bay leaf. Cook for 2 minutes.
  5. Pour in white wine and let it reduce by half.
  6. Add seafood stock and bring to a boil. Simmer for 20 minutes.
  7. Remove bay leaf and blend the soup until smooth.
  8. Stir in heavy cream and lobster meat. Heat through.
  9. Season with salt and pepper. Serve hot.
