- 2 lobsters (1.5 lbs each)
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 medium onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Prepare the lobsters by boiling them in salted water for 8-10 minutes.
- Remove the meat from the lobsters and chop it into small pieces.
- In a pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Sauté until soft.
- Add tomato paste, thyme, and bay leaf. Cook for 2 minutes.
- Pour in white wine and let it reduce by half.
- Add seafood stock and bring to a boil. Simmer for 20 minutes.
- Remove bay leaf and blend the soup until smooth.
- Stir in heavy cream and lobster meat. Heat through.
- Season with salt and pepper. Serve hot.
