Description

A classic Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 4 slices bacon, chopped

Instructions

  1. Soak black-eyed peas overnight, then drain.
  2. In a large pot, cook bacon until crispy.
  3. Add onion and garlic to the pot and sauté until soft.
  4. Stir in black-eyed peas, rice, chicken broth, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  6. Remove bay leaf and serve hot.

Notes

  • For added flavor, use smoked sausage instead of bacon.
