Ingredients

- 2 cups fresh black eyed peas
- 1 tablespoon olive oil
- 1 onion, chopped

- 4 cups vegetable broth
Instructions
- Rinse the black eyed peas under cold water.
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper, salt, black pepper, and cumin; cook for 2 minutes.
- Add black eyed peas and vegetable broth; bring to a boil.
- Reduce heat and simmer for 25-30 minutes until peas are tender.
- Serve warm.
