- 1 pound frozen black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups diced tomatoes
- 1 cup chopped carrots
Instructions
- Rinse the frozen black eyed peas under cold water.
- Add the peas to the crock pot.
- Pour in the vegetable broth.
- Add the chopped onion, minced garlic, cumin, paprika, and season with salt and pepper.
- Stir in the diced tomatoes and chopped carrots.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Check for tenderness and adjust seasoning as needed before serving.
Notes
- For added flavor, include smoked sausage or ham.
- Serve with cornbread for a complete meal.
- Store leftovers in an airtight container in the fridge for up to 3 days.
