Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the egg and vanilla extract, mixing well.
- In another bowl, combine flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Stir in the brewed coffee and chocolate chips if using.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes until golden.
- Allow cookies to cool before serving.
Notes
