Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter, brown sugar, and granulated sugar.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, combine flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in the brewed coffee and chocolate chips if using.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes until golden.
