Description
Delicious gingerbread cookies with a sweet filling.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup jam or preserves for filling
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, ginger, cinnamon, baking soda, and salt.
- In another bowl, cream butter and brown sugar until light.
- Add molasses to the butter mixture and combine well.
- Gradually add dry ingredients to the wet mixture.
- Chill the dough for 30 minutes.
- Roll dough into small balls and place on a baking sheet.
- Make an indentation in each ball with your thumb.
- Fill the indentation with jam.
- Bake for 10-12 minutes or until golden.
Notes
- Store cookies in an airtight container.
- Use different flavors of jam for variety.
- Chill dough for better handling.
