Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • 68 tablespoons water
  • Food coloring (orange, black, green, purple)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add egg and vanilla to the butter mixture. Mix well.
  5. Gradually add dry ingredients to the wet mixture. Mix until combined.
  6. Chill dough for at least 1 hour.
  7. Roll out dough on a floured surface to 1/4 inch thick.
  8. Cut shapes with cookie cutters and place on baking sheets.
  9. Bake for 8-10 minutes or until edges are lightly golden. Let cool.
  10. In a bowl, mix powdered sugar, meringue powder, and water to make the royal icing.
  11. Divide icing into bowls and add food coloring as desired.
  12. Decorate cooled cookies with icing. Allow to dry completely.
