Description

Ingredients

  • 1 cup rice
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions

  1. Soak black-eyed peas overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic; sauté until translucent.
  4. Add smoked ham hock and soaked black-eyed peas.
  5. Pour in water and bring to a boil.
  6. Reduce heat and simmer for 1 hour.
  7. Add rice, salt, black pepper, and cayenne pepper.
  8. Cover and cook for an additional 20 minutes or until rice is tender.
  9. Remove the ham hock, shred the meat, and return it to the pot.
  10. Serve hot.
