A simple and flavorful Hoppin’ John recipe made in an Instant Pot.
Ingredients

- 1 cup dried black-eyed peas
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 1 bay leaf
- 1 cup cooked rice
Instructions
- Rinse and sort the black-eyed peas.
- Turn the Instant Pot to sauté mode and add olive oil.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in smoked paprika, salt, and pepper.
- Add black-eyed peas, vegetable broth, and bay leaf.
- Close the lid and set to manual high pressure for 15 minutes.
- Allow a natural release for 10 minutes, then quick release remaining pressure.
- Remove the bay leaf and stir in cooked rice.
Notes
- Soak peas overnight for faster cooking.
- Adjust seasoning to taste.
- Serve with cornbread for a complete meal.
