Ingredients

  • 1 cup dried black-eyed peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 cup cooked rice

Instructions

  1. Rinse and sort the black-eyed peas.
  2. Turn the Instant Pot to sauté mode and add olive oil.
  3. Add onion, garlic, and bell pepper. Sauté until softened.
  4. Stir in smoked paprika, salt, and pepper.
  5. Add black-eyed peas, vegetable broth, and bay leaf.
  6. Close the lid and set to manual high pressure for 15 minutes.
  7. Allow a natural release for 10 minutes, then quick release remaining pressure.
  8. Remove the bay leaf and stir in cooked rice.

Notes

  • Soak peas overnight for faster cooking.
  • Adjust seasoning to taste.
  • Serve with cornbread for a complete meal.
