Description
A creamy and flavorful lobster bisque that is perfect as a starter or main dish.
Ingredients

- 2 lobster tails
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrot, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Boil lobster tails for 8-10 minutes, then remove meat and chop.
- Sauté onion, celery, carrot, and garlic in a pot until soft.
- Add brandy and cook for 2 minutes.
- Stir in seafood stock, tomato paste, and thyme.
- Simmer for 30 minutes.
- Blend the mixture until smooth.
- Return to heat and add heavy cream and lobster meat.
- Season with salt and pepper.
- Serve hot.
Notes
- Use fresh lobster for best flavor.
- Can be made ahead and reheated.
- Garnish with fresh herbs if desired.
