Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse peas.
- In a large pot, cook sausage over medium heat until browned.
- Add onion, bell pepper, and garlic. Sauté until soft.
- Add peas, rice, chicken broth, salt, and spices. Stir well.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes until rice and peas are tender.
- Remove from heat and let sit for 5 minutes before serving.

- Use low-sodium broth for a healthier option.
- Substitute sausage with turkey sausage for a leaner dish.
- Serve with cornbread for a complete meal.
