A hearty and flavorful soup made with black-eyed peas, vegetables, and spices.
Ingredients

- 1 cup black-eyed peas
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Soak black-eyed peas overnight.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes, vegetable broth, black-eyed peas, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot.

- Can be stored in the refrigerator for up to 5 days.
