Ingredients

- 1 cup black-eyed peas, dried
- 1/2 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add soaked peas, rice, and vegetable broth.
- Stir in thyme, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
