Ingredients

- 2 cups black-eyed peas, cooked
- 1 cup diced tomatoes
- 1 cup chopped onion
- 1 cup bell pepper, chopped
- 1 cup corn, canned or frozen
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the black-eyed peas, diced tomatoes, onion, bell pepper, corn, garlic powder, cumin, chili powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 30-35 minutes until heated through and cheese is melted.
- Let it cool for a few minutes before serving.
