  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Drain and rinse the soaked black-eyed peas.
  2. Heat oil in a pan, add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste and green chilies, cook for 2 minutes.
  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes soften.
  6. Add black-eyed peas and mix well.
  7. Add water as needed, cover, and cook until peas are tender.
  8. Stir in garam masala and cook for another minute.
  9. Garnish with fresh coriander leaves and serve hot.
