Instructions

  1. Rinse the black eyed peas under cold water.
  2. Soak the peas in water for at least 4 hours or overnight.
  3. Drain and rinse the peas again.
  4. In a pot, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until translucent.
  6. Add the black eyed peas, water, salt, pepper, smoked paprika, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes until tender.
