- 4 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 onion, chopped
- 1 teaspoon smoked paprika
- 1 bay leaf
Instructions
- Rinse the black eyed peas under cold water.
- Soak the peas in water for at least 4 hours or overnight.
- Drain and rinse the peas again.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add the black eyed peas, water, salt, pepper, smoked paprika, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until tender.
- Remove the bay leaf before serving.
Notes
- Adjust seasoning to taste.
- For more flavor, add ham or bacon.
- Serve with rice or cornbread.
