A simple and delicious vegan recipe for black-eyed peas cooked in an instant pot.

- 1 cup dried black-eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 bay leaf
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the black-eyed peas under cold water.
- Set the instant pot to sauté mode and add chopped onion and garlic. Cook until onion is translucent.
- Add the black-eyed peas, vegetable broth, cumin, paprika, bay leaf, salt, and black pepper.
- Close the lid and set the instant pot to high pressure for 15 minutes.
- Once cooking is complete, allow for natural release for 10 minutes, then quick release the remaining pressure.
- Remove bay leaf before serving.
Notes
- Soaking the peas overnight is optional but can reduce cooking time.
- Adjust spices to your taste.
- Serve with rice or cornbread for a complete meal.
