Description

A simple and delicious vegan recipe for black-eyed peas cooked in an instant pot.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. Set the instant pot to sauté mode and add chopped onion and garlic. Cook until onion is translucent.
  3. Add the black-eyed peas, vegetable broth, cumin, paprika, bay leaf, salt, and black pepper.
  4. Close the lid and set the instant pot to high pressure for 15 minutes.
  5. Once cooking is complete, allow for natural release for 10 minutes, then quick release the remaining pressure.
  6. Remove bay leaf before serving.

Notes

  • Soaking the peas overnight is optional but can reduce cooking time.
  • Adjust spices to your taste.
  • Serve with rice or cornbread for a complete meal.
