Description
A nutritious and hearty dish made with lima beans and black-eyed peas.
Ingredients

- 1 cup lima beans, soaked overnight
- 1 cup black-eyed peas, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Drain and rinse the soaked beans.
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Add the lima beans and black-eyed peas to the pot.
- Pour in the vegetable broth and add thyme.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add salt and pepper to taste.
- Serve warm.

- Soaking beans reduces cooking time.
- Store leftovers in the refrigerator.
- Can be served with rice or bread.
