Ingredients

  • 1 cup lima beans, soaked overnight
  • 1 cup black-eyed peas, soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. Heat olive oil in a pot over medium heat.
  3. Add chopped onion and garlic; sauté until soft.
  4. Add the lima beans and black-eyed peas to the pot.
  5. Pour in the vegetable broth and add thyme.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. Add salt and pepper to taste.
  8. Serve warm.
