A delicious lobster baked potato topped with creamy butter and herbs.


Ingredients

  • 2 large baking potatoes
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 2 tablespoons chives, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Bake the potatoes for about 45 minutes until tender.
  4. While the potatoes bake, mix lobster, sour cream, melted butter, chives, lemon juice, salt, and pepper in a bowl.
  5. When the potatoes are done, cut them open and fluff the insides with a fork.
  6. Stuff the potatoes with the lobster mixture.
  7. Return to the oven for 10 minutes to warm the filling.
  8. Serve hot.
