Ingredients

  • 2 lobster tails
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Boil lobster tails for 8-10 minutes, then remove meat and chop.
  2. Sauté onion, celery, carrot, and garlic in a pot until soft.
  3. Add brandy and cook for 2 minutes.
  4. Stir in seafood stock, tomato paste, and thyme.
  5. Simmer for 30 minutes.
  6. Blend the mixture until smooth.
  7. Return to heat and add heavy cream and lobster meat.
  8. Season with salt and pepper.
  9. Serve hot.

  • Use fresh lobster for best flavor.
