Ingredients

  • 4 cups lobster stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup carrot, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add onion, celery, carrot, and garlic. Sauté until softened.
  3. Add tomato paste and paprika. Cook for 2 minutes.
  4. Pour in the white wine and reduce by half.
  5. Add lobster stock and bring to a simmer.
  6. Add lobster tails and cook for 10 minutes.
  7. Remove lobster tails, let cool, and chop meat.
  8. Blend the soup until smooth, then stir in heavy cream.
  9. Add chopped lobster meat and season with salt and pepper.
  10. Serve hot.
