Ingredients

- 2 lobster tails
- 4 cups lobster stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1/4 cup onion, chopped
- 1/4 cup celery, chopped
- 1/4 cup carrot, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add onion, celery, carrot, and garlic. Sauté until softened.
- Add tomato paste and paprika. Cook for 2 minutes.
- Pour in the white wine and reduce by half.
- Add lobster stock and bring to a simmer.
- Add lobster tails and cook for 10 minutes.
- Remove lobster tails, let cool, and chop meat.
- Blend the soup until smooth, then stir in heavy cream.
- Add chopped lobster meat and season with salt and pepper.
- Serve hot.
