Ingredients

  • 2 lobsters, cooked and shells removed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 1 teaspoon of thyme
  • 1 bay leaf
  • 8 cups of water
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute.
  3. Stir in tomato paste, thyme, and bay leaf.
  4. Add lobster shells and water, then bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Strain the broth and discard solids.
  7. Season with salt and pepper.

  • Use the broth immediately or store it in the refrigerator for up to 3 days.
