A fresh take on the classic Cobb salad featuring lobster.
Ingredients

- 2 cups cooked lobster meat, chopped
- 4 cups mixed greens
- 1 avocado, diced
- 2 hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
- 1/4 cup bacon, cooked and crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Prepare all ingredients and place them in separate bowls.
- In a large bowl, combine the mixed greens and arrange the lobster, avocado, eggs, tomatoes, blue cheese, and bacon on top.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad.
- Toss gently before serving.
