Ingredients

- 1 cup cooked lobster meat, chopped
- 2 cups heavy cream
- 1/2 cup sugar
- 1/4 cup lemon juice
- 1 tablespoon vanilla extract
- 2 tablespoons gelatin
- 1/4 teaspoon salt
Instructions
- In a bowl, mix the chopped lobster meat with lemon juice and set aside.
- In a saucepan, combine heavy cream, sugar, and salt, and heat until sugar dissolves.
- Sprinkle gelatin over the cream mixture and stir until dissolved.
- Remove from heat and add vanilla extract.
- Let the mixture cool slightly, then fold in the lobster mixture.
- Pour into molds and refrigerate for at least 4 hours.
- Unmold and serve chilled.
