Delicious lobster enchiladas with a creamy sauce.
Ingredients

- 2 cups cooked lobster meat, chopped
- 8 corn tortillas
- 1 cup shredded cheese
- 1 cup sour cream
- 1/2 cup green onions, chopped
- 1 can green enchilada sauce
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add chopped lobster and green onions, cook for 3 minutes.
- Warm tortillas in a separate pan.
- Fill each tortilla with lobster mixture and cheese, roll them up.
- Place rolled tortillas in a baking dish.
- Pour green enchilada sauce over the top.
- Spread sour cream on top and sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is bubbly.
Notes
- Use fresh lobster for best flavor.
- Adjust spice level by adding jalapeños.
- Serve with a side of rice or beans.
