Ingredients

  • 2 cups cooked lobster meat, chopped
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 can green enchilada sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add chopped lobster and green onions, cook for 3 minutes.
  4. Warm tortillas in a separate pan.
  5. Fill each tortilla with lobster mixture and cheese, roll them up.
  6. Place rolled tortillas in a baking dish.
  7. Pour green enchilada sauce over the top.
  8. Spread sour cream on top and sprinkle with remaining cheese.
  9. Bake for 20 minutes until cheese is bubbly.
