- 2 lobsters, cooked and chopped
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1 cup onion, diced
- 1 cup green bell pepper, diced
- 1 cup celery, diced
- 4 cloves garlic, minced
- 4 cups seafood stock
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions, sliced
- 1/4 cup parsley, chopped
- Rice for serving
Instructions
- In a large pot, melt the butter over medium heat.
- Add flour and stir to create a roux, cooking until golden brown.
- Add onion, bell pepper, celery, and garlic. Sauté until soft.
- Slowly add seafood stock, stirring to combine.
- Add Cajun seasoning, salt, and pepper. Simmer for 10 minutes.
- Stir in chopped lobster and cook for an additional 5 minutes.
- Garnish with green onions and parsley.
- Serve over rice.

- Use fresh lobster for best results.
- Can substitute shrimp for lobster if desired.
