- 2 cups cooked rice
- 1 lobster, cooked and chopped
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat oil in a large pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add mixed vegetables and cook for 3 minutes.
- Push vegetables aside and add beaten eggs, scrambling until cooked.
- Mix in the cooked rice and lobster.
- Add soy sauce, salt, and pepper, stirring well.
- Top with green onions and serve hot.

- Use day-old rice for better texture.
- Adjust soy sauce to taste.
- Feel free to add other proteins like shrimp or chicken.
