Ingredients

  • 2 slices of sourdough bread
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup mozzarella cheese, shredded
  • 2 tablespoons butter
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Mix lobster meat, mayonnaise, lemon juice, salt, and pepper in a bowl.
  2. Butter one side of each slice of bread.
  3. Place one slice of bread, butter side down, on a skillet over medium heat.
  4. Add the lobster mixture on top of the bread.
  5. Sprinkle cheddar and mozzarella cheese over the lobster.
  6. Top with the second slice of bread, butter side up.
  7. Cook until golden brown, about 3-4 minutes.
  8. Flip the sandwich and cook the other side until golden and the cheese melts.
  9. Remove from skillet and let it cool for a minute before slicing.
