Description

Ingredients

  • 2 cups lobster meat, chopped
  • 1 cup lobster mushrooms, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add lobster mushrooms, cook until they soften.
  4. Stir in vegetable broth and bring to a boil.
  5. Add lobster meat and simmer for 10 minutes.
  6. Purée the soup until smooth.
