Ingredients

- 1 lb lobster meat, cooked and chopped
- 3 tablespoons butter
- 1/4 cup shallots, finely chopped
- 1/4 cup brandy
- 1 cup heavy cream
- 2 egg yolks
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Melt butter in a pan over medium heat.
- Add shallots and sauté until soft.
- Stir in the lobster meat.
- Pour in the brandy and cook for 2 minutes.
- Reduce heat and add heavy cream.
- In a bowl, whisk egg yolks and temper with cream mixture.
- Combine everything and heat gently until thickened.
- Season with salt and pepper.
- Garnish with parsley and serve.
