Instructions
- Rinse the black-eyed peas under cold water.
- Soak the peas in water for 6-8 hours or overnight.
- Drain the peas and place them in a pot.
- Add fresh water, onion, garlic, salt, black pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-45 minutes until tender.
- Remove the bay leaf and serve.
Notes
- For added flavor, cook with smoked meat.
