A collection of meals suitable for the Daniel Fast lasting 21 days.
Ingredients
- Quinoa – 1 cup
- Black beans – 1 can
- Tomatoes – 2 cups, diced
- Bell peppers – 1 cup, chopped
- Spinach – 2 cups
- Olive oil – 2 tablespoons
- Lemon juice – 2 tablespoons
- Garlic – 2 cloves, minced
- Onion – 1 medium, chopped
- Herbs and spices – to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and 2 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil. Add onion and garlic. Sauté until soft.
- Add bell peppers and tomatoes. Cook for 5 minutes.
- Stir in black beans and spinach. Cook until spinach wilts.
- Add cooked quinoa to the skillet. Mix well.
- Drizzle with lemon juice. Season with herbs and spices.
- Serve warm.
