A hearty and nutritious dish featuring black-eyed peas.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1 tablespoon olive oil
- 2 carrots, diced
- 1 bell pepper, diced
- 1 can diced tomatoes (14 oz)
- 2 cups spinach
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain and rinse the peas again.
- In a pot, heat olive oil over medium heat.
- Add onions and garlic, sauté until soft.
- Add carrots and bell pepper, cook for 5 minutes.
- Add black-eyed peas, water, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add diced tomatoes and spinach, cook for an additional 10 minutes.
- Serve warm.

- Feel free to add other vegetables.
- Adjust seasoning to taste.
