Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14 oz)
  • 2 cups spinach

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight.
  2. Drain and rinse the peas again.
  3. In a pot, heat olive oil over medium heat.
  4. Add onions and garlic, sauté until soft.
  5. Add carrots and bell pepper, cook for 5 minutes.
  6. Add black-eyed peas, water, salt, pepper, and cumin.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Add diced tomatoes and spinach, cook for an additional 10 minutes.
  9. Serve warm.
