Description
A traditional dish often served on New Year’s Day for good luck.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse black-eyed peas and soak them overnight.
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add soaked black-eyed peas, water, and ham hock.
- Stir in salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove ham hock, shred meat, and return to pot.
- Serve warm.
Notes
- Can substitute ham hock with turkey for a lighter option.
- Serve with cornbread for a complete meal.
