Peppermint macarons are delicate French cookies filled with a peppermint-flavored buttercream.

- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon peppermint extract
- 1/2 teaspoon red food coloring
- 1 cup unsalted butter, softened
- 2 cups powdered sugar (for filling)
- 1/2 teaspoon peppermint extract (for filling)
Instructions
- Preheat the oven to 300°F (150°C).
- Sift together almond flour and powdered sugar.
- In a clean bowl, beat egg whites until foamy.
- Gradually add granulated sugar and beat until stiff peaks form.
- Fold in the almond mixture and peppermint extract.
- Add red food coloring and mix until combined.
- Pipe small circles onto a baking sheet lined with parchment paper.
- Let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes, then cool completely.
- Beat butter until creamy, then add powdered sugar and peppermint extract for filling.
- Pipe the buttercream onto half of the macarons and sandwich with the other half.

- Let the macarons rest before baking for best results.
