Crispy and flavorful fritters made with spinach and black-eyed peas.
Ingredients

- 2 cups fresh spinach, chopped
- 1 cup black-eyed peas, cooked
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 1/4 cup water
- Oil for frying
Instructions
- In a bowl, mix spinach, black-eyed peas, onion, and garlic.
- In another bowl, combine flour, cornmeal, baking powder, salt, pepper, and cumin.
- Add the dry ingredients to the spinach mixture.
- Stir in water until a batter forms.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of the batter into the hot oil.
- Fry until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
Notes
- Serve with your favorite dipping sauce.
- Store leftovers in the refrigerator.
