- 1 pork ribeye roast (about 3–4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
Instructions
- Preheat your oven to 350°F (175°C).
- Pat the pork ribeye roast dry with paper towels.
- Rub the olive oil all over the roast.
- In a small bowl, mix garlic powder, onion powder, salt, pepper, thyme, and paprika.
- Rub the spice mixture evenly over the roast.
- Place the roast in a roasting pan.
- Cook for about 1.5 to 2 hours or until the internal temperature reaches 145°F (63°C).
- Let the roast rest for 15 minutes before slicing.

- Adjust seasoning to your taste.
- Leftovers can be stored in the fridge for up to 3 days.
