- 1 pound black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In the pressure cooker, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add black-eyed peas, water, salt, pepper, and smoked paprika.
- Close the lid, set the pressure to high, and cook for 10 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
- Stir and serve hot.
Notes
- Soaking the peas overnight can reduce cooking time.
- Adjust seasonings to taste.
- Store leftovers in an airtight container in the fridge.
