Instructions
- In a large bowl, combine cooked black-eyed peas, bell pepper, red onion, cherry tomatoes, and cucumber.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Garnish with fresh parsley.
- Chill in the refrigerator for at least 30 minutes before serving.
