Ingredients
- Quinoa – 1 cup
- Black beans – 1 can
- Chopped tomatoes – 1 can
- Spinach – 2 cups
- Olive oil – 2 tablespoons
- Garlic – 2 cloves
- Onion – 1 medium
- Bell pepper – 1 medium
- Cumin – 1 teaspoon
- Salt – to taste
- Pepper – to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and 2 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add chopped onion, bell pepper, and garlic. Sauté until soft.
- Add black beans, tomatoes, and spinach to the skillet.
- Season with cumin, salt, and pepper.
- Cook for 5-7 minutes until heated through.
- Combine the vegetable mixture with cooked quinoa.
- Serve warm.
