Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and 2 cups of water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add chopped onion, bell pepper, and garlic. Sauté until soft.
  6. Add black beans, tomatoes, and spinach to the skillet.
  7. Season with cumin, salt, and pepper.
  8. Cook for 5-7 minutes until heated through.
  9. Combine the vegetable mixture with cooked quinoa.
  10. Serve warm.
