Ingredients

- 1 cup rice
- 1 cup black eyed peas
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

Instructions
- Rinse the black eyed peas and soak them for at least 4 hours.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add soaked black eyed peas and water to the pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice, salt, and pepper to the pot.
- Cover and cook for an additional 20 minutes or until rice is tender.
- Remove from heat and let it sit for 5 minutes before serving.

- Serve with a side of vegetables for a complete meal.
