Description
A hearty dish of black-eyed peas cooked with smoked turkey in an instant pot.
Ingredients

- 1 pound black-eyed peas
- 1 smoked turkey leg
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 2 bay leaves
Instructions
- Rinse the black-eyed peas and set aside.
- Turn on the instant pot and select the sauté function.
- Add onion and garlic, and sauté until soft.
- Add smoked turkey leg and cook for a few minutes.
- Stir in black-eyed peas, chicken broth, black pepper, salt, paprika, and bay leaves.
- Close the lid and set to high pressure for 30 minutes.
- Once done, allow for natural release for 10 minutes, then quick release the remaining pressure.
- Remove the turkey leg, shred the meat, and return it to the pot.
- Stir well and serve hot.
Notes
- Soak peas overnight for faster cooking.
- Adjust seasoning to taste.
- Great served with cornbread.
