Description

A hearty dish of black-eyed peas cooked with smoked turkey in an instant pot.


Ingredients

  • 1 pound black-eyed peas
  • 1 smoked turkey leg
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 2 bay leaves

Instructions

  1. Rinse the black-eyed peas and set aside.
  2. Turn on the instant pot and select the sauté function.
  3. Add onion and garlic, and sauté until soft.
  4. Add smoked turkey leg and cook for a few minutes.
  5. Stir in black-eyed peas, chicken broth, black pepper, salt, paprika, and bay leaves.
  6. Close the lid and set to high pressure for 30 minutes.
  7. Once done, allow for natural release for 10 minutes, then quick release the remaining pressure.
  8. Remove the turkey leg, shred the meat, and return it to the pot.
  9. Stir well and serve hot.

Notes

  • Soak peas overnight for faster cooking.
  • Adjust seasoning to taste.
  • Great served with cornbread.
