- 2 cups black-eyed peas

- 4 cups chicken broth

Instructions
- In a large pot, brown the sausage over medium heat.
- Add the chopped onion and minced garlic; sauté until soft.
- Stir in the black-eyed peas, chicken broth, salt, pepper, and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.

- Soak black-eyed peas overnight for quicker cooking.
- Adjust seasoning to taste.
