Description
Delicious snickerdoodle cookies made without butter.
Ingredients

- 1 cup coconut oil
- 1 cup sugar
- 2 large eggs
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix coconut oil and sugar until smooth.
- Add eggs and mix well.
- In another bowl, combine flour, cream of tartar, baking soda, and salt.
- Gradually add dry ingredients to wet mixture.
- In a small bowl, mix cinnamon and sugar for rolling.
- Form dough into balls and roll in cinnamon sugar.
- Place on baking sheets and bake for 10-12 minutes.
- Cool on wire racks before serving.
Notes
- Store cookies in an airtight container.
- Adjust cinnamon to taste.
- Ensure coconut oil is solid but not hard.
