Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, cooking until soft.
  5. Add ham hock, black-eyed peas, water, salt, pepper, paprika, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Remove ham hock, shred meat, and return to pot.
  8. Serve warm.
