  • 1 smoked ham hock (optional)

Instructions

  1. Rinse the black eyed peas under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft.
  4. Add black eyed peas, water, salt, pepper, and bay leaf.
  5. If using, add the smoked ham hock.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Check peas for tenderness, cook longer if necessary.
  8. Remove bay leaf and ham hock before serving.
