Description
A classic soul food dish featuring black eyed peas, often enjoyed for good luck.
Ingredients

- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 smoked ham hock (optional)
Instructions
- Rinse the black eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add black eyed peas, water, salt, pepper, and bay leaf.
- If using, add the smoked ham hock.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Check peas for tenderness, cook longer if necessary.
- Remove bay leaf and ham hock before serving.
Notes
- Serve with cornbread for a complete meal.
- Store leftovers in the refrigerator for up to 4 days.
- Black eyed peas can be soaked overnight to reduce cooking time.
