- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 ham hock or smoked sausage
- 1 teaspoon salt

- 1 teaspoon paprika
- 1 bay leaf
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In a crock pot, add the peas and water.
- Add onion, garlic, and ham hock or sausage.
- Season with salt, pepper, paprika, and bay leaf.
- Drizzle with olive oil.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Stir well and serve hot.

- Soak peas overnight for quicker cooking.
- Adjust seasoning according to your taste.
