Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, combine the peas and water.
- Add the onion, garlic, ham hock, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1-1.5 hours until peas are tender.
- Remove ham hock, shred meat, and return to pot.
- Stir in olive oil before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Serve with cornbread for a complete meal.
- Store leftovers in an airtight container in the fridge.
